What do all of us Mamas have in common when it comes to dinner time?
...could it possibly getting your kids and husband to eat like they somewhat love their bodies??
Just kidding, ehhhh not really!
It can be such a challenge getting all your veggies in and as a kid, why on earth would you make sure you did? Its up to mom to get those veggies in and it is a struggle! However I believe in eating good and healthy! Doctor up those veggies girl and you will blow your families mind!
I created this recipe in mind to do the same. My family isn't opposed to Zucchini, however if I had just served it with some salt and said have at it...there would be leftovers for me to finish once again and empty bellies waiting for their next chance of saturated fats and sugars. We got some picky eaters in this house.
The boys LOVED this recipe so much that they even asked to have it again...well my husband did, but Maverick actually filled up and slept through the night...can I get a "Hallelujah?!" So I consider this a freakin' WIN in my book!
Zucchini Parm
DIRECTIONS:
*note you may need to thaw out your ground beef before hand
1. Chop your Zucchini into the thickness of your liking. Sometimes thinner slices help with disgusing the flavor, but we like them a little thicker it gives you more to chew and helps give your lasagna some substance.
2. Once you have your slices mix up a couple of eggs in a little bowl and some almond flour and garlic salt in another.
3. Use a fork and drown the Zucchini slices into the eggs and then drop them in the flour/salt mixture to coat each slice.
4. As you are going through and coating the slices place the coated ones on a plate ready to be fried.
5. Coat a pan with olive oil and set it to medium high heat. Wait for the oil to heat and start adding the Zucchini to the pan. Flipping each side to make them nice and crispy.
6. As the Zucchini slices are being pan fried start adding the friend slices into your lasagna pan. The size should be determined by the amount of Zucchini you have.
7. As You fry the Zucchini start browning the ground beef on the stove. Once the meat is browned add garlic salt, pepper and tomato sauce of your choosing. mix together.
8. You want to lay the Zucchini slices by layers, once you finish a layer add meat sauce and motzerella cheese to each layer. The top layer should have meat sauce and cheese.
9. Once you have your layers turn oven to broil
10. Add your dish to the oven when ready and let it broil for at least 10 minutes. We like our a little more crunchy on top so we leave it in until the cheese on top is starting to brown a little.
11. Let sit for five minutes and serve!
