Healthy and Healing Crockpot Chicken Noodle Soup

                                         MAMA KAY'S CHICKEN NOODLE SOUP


Let me start off by first addressing my "clean eating" definition. I am a mom, a wife and a lover of all the food, both good and bad. Unfortunately my body isn't a lover to all foods. I have to eat a generally clean and healthy diet in order for everything to keep working. The way my family eats for the most part is clean, but we definitely like our refined sugar and Taco Bell-Bell Grande Nachos. SO when it comes to the majority of foods that touch our lips I have made it a goal to be healthy and with a purpose.

This MaMa thrives off of crock pot meals and fall! This soup is the best on a cold rainy day, or in this case its snowing right now and my family is sick.

My Grandmother makes the best Homemade Chicken Noodle soup. Whenever she talks about making chicken noodle soup she reminds me of its healing power. Seriously, whenever I am sick I just want to be curled up on her couch with one of her cozy blankets that smell like dryer sheets, a movie and her soup. This Recipe is heavily influenced by her.

My mom is the queen of veggies and natural feel good remedies. Growing up she would press garlic onto a spoon and pour some honey over it so it didn't burn your mouth too much. That women had seven children and she was dedicated to boost our immune systems in any way she could, which also went as far as giving her garlic to the neighborhood kids and friends coming in and out of the house. My mom heavily influenced the flavor and healing remedies in this soup.

My Aunt Tanya is the one who has heavily influenced me to think outside of the box when it comes to each ingredient I add to my foods. One of the biggest reasons why I started to shop and cook with ingredients that serve a purpose, which is why this soup may not seem like your traditional Chicken noodle soup.

My family love, loves this soup and we are so happy to be coming at ya with the perfect crockpot recipe for the day your family is a little too cold, or needs a pick me up in the middle of flu season!


                                                                         Ingredients
2 chicken breasts
1 onion
unpeeled big carrots
celery
2 Zucchini squashes
Garlic
Ground Root Tumeric
2 boxes of Chicken Stock
3/4 box of GF Noodles
Spinach
garlic salt
pepper

If you follow me on Instagram you will probably already know this, but I DON'T MEASURE anything. I just go by the taste and preference.
First thing is first, I start by grabbing the crockpot and throwing in my chicken breasts. We usually have two. 
Then I cut up all the veggies to our preference. We love our carrots, so we usually use three to four of the big unpeeled carrots. A whole onion diced up. The celery...that's the tricky part because I actually hate celery, so much. So I really make sure they celery is thinly chopped and added. We like about two zucchinis diced up and then I have minced garlic on hand, but it's best when pressed. DO NOT PUT THE SPINACH IN YET.
Next, I add the chicken stock and spices.

 I add a little garlic salt and pepper and then add about a heaping spoonful of Ground Root Tumeric.




I put the crockpot to high and then let it cook for about four-four and a half hours whenever the chicken is cooked all the way.
Once the soup is cooked, I turn the crock pot off and add the noodles and thinly sliced spinach about 10-12 minutes before serving.
We love this with some buttered Ezekiel bread!
