Crustless Quiche
A couple months ago Spencer and some of his co-workers decided to try going Keto. Anything semi- healthy that Spencer mentions he wants to jump on I am right there to support it! So we made this bet on who could go keto the longest! It was so fun to support each other and have a competition... especially because it didn't last very long haha! But while we were cutting carbs we had to find some good recipes! This one is one of our favorites and we still eat it almost weekly!
Crustless Quiche
**by the way I NEVER measure anything so just keep that in mind, I kind of just play around with amounts until I find the consistency and taste that we like!
I start by heating the oven to 375 degrees.
While that is warming up I get a small glass pan out and spray it with some cooking oil
We have a Nutra Bullet so I grab one of the little cups and use that to blend everything
I add 4 eggs

about 1/2 cup-1 cup of heavy cream

about 1/2 cup of cottage cheese

two handfuls of Mexican blend cheese

I blend all of that together making sure everything is smooth consistency
In a pan I cook up some bacon
And then I pour everything from the cup into the baking dish and add the bacon and mix it all around.
When it comes to cooking it I watch it. I set the timer for 25 minutes and check it every few minutes after. We like it to be nice and firm on the outside, but soft and moist (hate, hate that word) on the inside. I usually do not cook it over 32 minutes.
I usually just like it plain, but Spencer loves sour cream and hot sauce with it. This recipe is very plain and great for picky eaters, but I love it best with mushrooms, chives and peppers cooked in!
